"PIZZA"

From the day i bought my microwave,making a "PIZZA" was always a dream for me n baking it was a delightful xpereince too.this's how i went..these days in markets pizza base's are readily available,so if u dont want to take the trouble of ba-
king pizza base u can omit the first part.n one more thing is that i depended on the pizza ketchup,from my local store.
For basic Pizza base
Flour:1 cup
Dry yeast:1/2 tsp
Sugar:1/2 tsp
Olive oil:1/2 tbsp
Salt:1/2 tsp.
For Toppings
Pizza ketchup:accordingly
shredded chicken:1/4 cup(cooked)
chopped onions:1 small
chopped capsicums:1
garlic chopped:3 to 4
cheese
olive oil:1 tbsp




Method :-
combine all the ingredients exept olive oil and knead in to soft dough.add ther oil and knead again.cover the dough with a
wet muslin cloth and allow it to proove till it doubles.press the dough again to remove the air.now u can roll it into a circle
of 250mm thickness a nd 1/4" thickness.




How to proceed:-
Using the grill &oven option,preheat the microwave @ 220 degree centigrade(440 degree F)for 5 minute.Plce a pizza base on a greased plate
and bake at 220 degreee C for 5 mts.
Remove and spread the toppings.u can make variations with your favourite toppings.After all the ingredients are added,drizzle with olive oil


and bake in a preaheated oven at 220 degree C for 6 minutes,or till the base is evenly brown.Serve hot...

-APPAM'S-


Well,its almost a month since i posted something here.should confess,I WAS LAZY TO TO THE CORE..or ELSE i was moodless to cook.here also ,(in this post )u can see its reflection...shadowed in laziness,i din take the strain to cook a curry to accompany appam's.This so called APPAM,(I dont know for sure how many of you r familiar with this name) is an all time served dish in most of the traditional christian families during any kind of celebrations.B it x'mas ,Easter,or a regular getto's .lemme get it for you...

Raw rice(PACHARI):2 cups
Tender coconut:1
Cooked rice:5 to 6 tbsps
yeast
salt n sugar(accordingly)
to begin with wash the rice properly n soak it in water for atleast 2 hours.its always good to use fresh coconuts for this.Dont worry if its hard for you to get tender ones.grind together all the ingredients except the last 2 ones.make sure the batter's grinded to paste with no lumps.now the yeast part,i always use imported ones,( no local hasbrand worked the way they do for me till now)mix a few yeast granules in light lukewarm water and keep aside for 30 minutes.and its ready to go to batter.add salt n sugar accordingly.now its time to keep it for fermentation.might take from 6 to 7 hours

THIS IS THE RESULT OF IT...NOW THE "APPA CHATTY"


THIS IS THE APPACHATTY I USED.NOW ADD 2 SPOONFULL OF BATTER TO THIS VESSEL N SPREAD IT IN A CIRCULAR MOVEMENT BY HOLDING ITS HANDLE,WITH YOUR HANDS..DONT USE SPOON AS U DO FOR DOSAS.COVER IT WITH ITS LID N WAIT TO GET IT COOKED.ITS ALMOST DONE WHEN ITS SIDES STARTS BROWNING N DON'T FLIP IT.This goes well with stews n as i began i was lazy to go for it..so winded up the dish with a bottle of Honey..

Eggs- For all Season's

Back from a function @ one of my relatives place,I am all set for a new recipe.Its an easy to cook dish.Any time with in no time if u are always in stock with eggs.To start with u'll need


Eggs:6(boiled cut in to halves)
Shallots:1/2 cup.
Ginger:1/2 inch size.
Garlic:5 to 6 pods.
Chicken masala:4 to 5 tbsp.
Pepper powder:1 to 2 tsp.
Salt
Oil.


Make a paste with chicken masala,pepper,salt with a little water.Marinate the eggs with it.Now shallow fry the eggs in a pan,till the masala's are properly binded to eggs.keep in aside.In another pan saute well,thinnely sliced shallots,ginger and garlic very well.when its almost brown add a little chilly powder,turmeric powder,and pepper and cook for a while.turn off the flame.spread a layer of this in the serving bowl and arrange the fried eggs on top and finally end with a topping with the shallot mix and its all set to serve.

Green Sandwich






This sandwich is so much green just enough for any time of the day...a plate that both non veg's and veg's can handle.


Bread Slices:4
Grated coconut:1/2 cup
lime juice
Green chilly
Garlic:2 pods
Ginger:1 inch size
Shallots(optional):3 or 4
Curyy leaves,a handfull.
Corriander leaves
Butter.






To start with,make a paste of all Ingredients except butter and lime juice.













when its done add butter,lime juice and salt.
its ready to spread.cuts the sides of your bread
slices and spread it between two slices.









Its an ideal snack and a great tiffin pack.NJOI!!!

..Caramel Custard ..

Well as a beginner ,for the past one month I've been experimenting with this blogger,going through pretold stories,the way things are told here,I'm all set for my second post ..i was very ardent on one thing.if ever I get a chance to write on my cooking ,the first with no doubt should be my favourite "CARAMEL CUSTARD",but my husband n son strongly disagrees with this.but I've a gr8 support n cheers my family side.My Appa n Sis just love's this delite.Goin back how it started..Mom in our childhood always depended on ready to cook custard packs n i still remember Brown n Paulson always in store in our refrigerators those time.this is how i went on..
milk-3 Cups
eggs-5.
condensed milk-1/2 tin.
sugar-accordingly
vanilla essence-3 drops.
Before starting make sure all the ingredients are in room temperature.In a vessel beat eggs and sugar well.to this mixture slowly add warm milk (pre-boiled) and blend well.now u can add condensed milk and vanilla essence.regulate the sugar according to your taste,taken in to consideration ,the condensed milk factor.now you have to caramelize the sugar in the bowl u r going to set the pudding to cook.For that take 3 to4 tbsp of sugar and heat it.stir it continuesly taken are that no lumps are formed.when it start browning reduce the flame and remove from fire on golden brown.spread the caramel and let it cool.pour the mixture to this pan and the next part is steaming it in a steamer for 40 minutes.20 minutes in high flame n d rest of the 20 minutes in low flame.u can remove it from the steamer,and when its cooled unmould and serve it cool.

A hectic day-Escape from my noon nap

Gosh!!for how many days i 've been trying hard to escape from that .finally won over it,hats off to me.Today i engaged myself outdoor,that the thought of bed din pre-ocuupy me in any way.d only slight reminder of it is dis stupid rain.Dont know wen it will get over.seems like the gods have blessed us with a year full of rain.its almost time for my son..i got to go.steaming tea's calling me n my maid's learning ..getting adjusted with her new atmosphere.ha,tea seems like a good subject to speak more.well i 'll make it in my next to come..
